As we paddle back into “real life” with all its vacuuming, clothing organization and laundering, cloth diapering, and meal making, I am feeling new zest for the bountiful produce at this time of year. I am hungering for plateful after plateful of vegetable!! Yes, it is true, this is the time of the year to stock up and satisfy all my fresh tomato and cucumber cravings. Salad, salad, salad!! And still a bit of basil obsession. We are going through this much basil a week:
Yesterday I made an amazing creamy cauliflower soup. Thanks Joanna V for picking us up the large cauliflower that inspired it’s making. I really am not the biggest fan of cream soups, but this one from “Simply In Season” satisfied 4 out of 5 palettes in our house. This guy did not go for it:
Hearty cauliflower soup: 2 cups potatoes, 1 cup onion, 1 cup carrot, 1/2 cup celery, 1 cup water. Cook together for 5 min, all chopped up of course. Add 2 cups cauliflower (original called for broccoli), cook another 5-10 min then add 3 c milk and 2 tsp veg stock, salt and pepper to taste (original called for Worcestershire sauce but I skipped that). Heat to boiling. Then mix in a bowl 1/3c flour with 1c milk. Mix well! Then pour into soup and cook until just thick. Turn off heat. Says to serve with grated cheddar or Swiss, but I skipped that too!
